Cucumber Relish (L'Academie de Cuisine)

- This is great relish served on grilled/sauteed fish. Nice and Light!

Ingredients

  • 2 Cucumbers - peeled, cut in half, seeded and diced
  • 1 Yellow bell pepper - diced
  • 1 small red pepper, diced
  • 3 Roma tomatoes , seeds removed and diced
  • 2 TB chopped cilantro leaves
  • 1 jalapeno, seeded and finely chopped
  • juice of 1 lemon
  • 1 TB rice wine vinegar
  • 1/2 tsp salt
  • 1 tsp sugar

Preparation

Step 1

Whisk together sugar, salt, lemon juice and rice wine vinegar to taste.

Toss with remaining ingredients when ready to serve.
