Cucumber Relish (L'Academie de Cuisine)

Ingredients
- 2 Cucumbers - peeled, cut in half, seeded and diced
- 1 Yellow bell pepper - diced
- 1 small red pepper, diced
- 3 Roma tomatoes , seeds removed and diced
- 2 TB chopped cilantro leaves
- 1 jalapeno, seeded and finely chopped
- juice of 1 lemon
- 1 TB rice wine vinegar
- 1/2 tsp salt
- 1 tsp sugar
Preparation
Step 1
Whisk together sugar, salt, lemon juice and rice wine vinegar to taste.
Toss with remaining ingredients when ready to serve.
