Pine Nut and Orange Wild Rice

Ingredients

  • 5 c. water
  • 1 c. wild rice
  • 1 c. brown rice
  • 1 c. dried currants
  • 1/2 c. toasted pine nuts
  • 4 Tblsp chopped parsley
  • 2 Tblsp grated orange zest
  • 1/4 c. olive oil
  • 2 Tblsp orange juice
  • S & P

Preparation

Step 1

Pour 3 cups water in a saucepan and bring to a boil and add wild rice. Stir, reduce heat; cover and simmer for 25 minutes.Drain and place in lg bowl.

Pour remaining 2 cups water in separate saucepan. Bring to a boil and add brown rice. Reduce heat, cover pan and simmer for 15 minutes. Place in bowl with wild rice.

Gently toss remaining ingredients with rices.

An hour before serving, preheat oven to 350.

Place ricee in an ovenproof casserole and cover with foil. Heat through for 20 minutes. Sprinkle with Parmesan.
