Pumpkin-Cranberrry Muffins

Ingredients

  • 3 cups flour
  • 3 cups sugar
  • 1 1/2 tsp. ground cinnamon
  • 1/2 tsp. baking powder
  • 1 tsp. baking soda
  • 1 (15 ounce can pumpkin)
  • 1 cup canola oil
  • 3 large eggs
  • 1/2 cup craisins
  • shelled pumpkin seeds

Preparation

Step 1

1. Preheat oven to 350 degrees. Spray pam into 24 big muffin tins. Set aside.
2. In the bowl of an electric mixer, mix the flour,sugar,cinnamon,baking powder, and baking soda.
3. Add the pumpkin,oil,eggs, and craisins. Mix for 2 minutes.
4. Pour the batter into the prepared muffin tins. Fill 3/4 full. Top each muffin with a few pumpkin seeds.
5. Bake,uncovered,25-35 minutes.
6. Serve hot or at room temperature.
