Ingredients
- 1 can pinto beans
- 1 can black beans
- 1 can black eyed peas
- 1 can shoepeg corn
- 2 c. peppers - green, red & yellow chopped
- 1 small red onion - chopped
- 1 c. celery - chopped
- 1 T. chopped jalapenos
- 1/2 c. oil
- 3/4 c. cider vinegar
- 1 c. splenda (sugar)
- 1 t. salt
- 1/2 t. pepper
Preparation
Step 1
Drain beans, peas and corn; mix together.
Chop all vegetables and add to above mixture.
Mix together jalapenos, oil, vinegar, sugar, salt & pepper. Pour mixture over everything. Best if allowed to marinate overnight.
Serve with tortilla chips.
