Beef & Bean Burritos

I love these with "salsa verde".

Ingredients

  • 1 1/2 pounds beef or pork for stew
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 can (4 oz) green chilies, chopped
  • 1 teaspoon salt
  • 1 1/2 teaspoons oregano leaves, crushed
  • 1 teaspoon ground cumin
  • 1/4 teaspoon pepper
  • 1 cup water
  • 1 16 oz can of black beans or refried beans
  • 12 8 inch totillias
  • 2 cups shredded cheddar or monterey jack cheese
  • sour cream
  • salsa (I like these with green salsa)

Step 1

Cut beef or pork into 1/2 inch pieces. In 2 quart sauce pan heat meat and next 8 ingredients to boiling. Reduce heat to low and simmer for 2 hours or until meat is fork tender. Uncover, turn up heat and cook until most of the liquid evaporates, stirring often.

Spoon heaping tablespoon of beans in center of each tortilla. Top with 3 tablespoons of meat mixture and 3 tablespoons shredded cheese. Fold right and left sides of tortilla over mixture, fold one end in and roll so seam in on bottom.

Arrange rolled burritos on baking sheet (seam side down), cover with foil and bake at 350F 15 minutes or until hot. Serve warm with sour cream and salsa.
