Banana Cake with Chocolate frosting

Ingredients
- Frosting:
- Cake
- 3/4 cup unsalted butter
- 2 cups sugar
- 3 eggs
- 1 1/2 cups mashed bananas ( 2-3 large)
- 1 1/2 tsp vanilla x
- 3 cups flour
- 1 1/2 tsp baking powder
- 1 1/2 tsp baking soda
- 1 tsp salt
- 3/4 cup buttermilk
- 3/4 cup chopped unsalted pistachios
- 2 8 oz whipped cream cheese room temp.
- 1/2 cup butter, softened
- 1/2 cup baking cocoa
- 4 1/2 cups confectioners sugar
- 2 tsp vanilla x

Preparation
Step 1
In large bowl, cream butter and sugar until light and fluffy, Add eggs one at a time.
Beat in bananas and vanilla.
Combine flour, baking powder, baking soda an salt. Add to creamed mixture alternately with buttermilk.
Fold in Pistachios.
Transfer to two greased and floured 8 inch round baking pans.
Bake at 350 for 45-55 mins.
Cool for 10 mins before removing from pan to a wire rack. Cool completely.
For frosting, beat cream cheese and butter until smooth. Add cocoa. Mix.
Add confectioners sugar and vanilla until creamy.
Place one cake layer on serving plate. spread top with 1 cup frosting. Top with remaking cake.
Spread top and sides with 2 cups frosting.
cut a small hole in the corner of a plastic bag. insert #45 petal pasty tip.
Fill bag with reaming frosting.
Refrigerate for an hour or until frosting is set.
