Baked potatoe casserole

Ingredients
- 8 medium oitaties peeled and cut in 1" chunks
- 1 cup evaporated low fat 2% milk
- 1 /c cup light sour cream
- 1 tsp salt
- 1/2 sp black pepper
- 2 cups shredded cheddar cheese divided
- 6 slices turkey bacon cooked crumbled and divided
- sliced green onion

Preparation
Step 1
Cook potatoes and drain.
Preheat oven to 350
Grease 2 1/2 qrt casserole dish
Return potatoes to saucepan, add milk sour cream salt and pepper.
Beat with hand held mixer till smooth. Stir in 1 1/2 cups cheese and half of bacon. Put in casserole
Bake for 20-25 min until heated through. Top with remaining cheese bacon and green onions. Bake 3-5 more minutes till cheese is melted.
