Ingredients
- 2 tbsp olive oil
- 2 garlic cloves, crushed
- 2 tbsp minced parsley
- 1/2 tsp pepper
- 3-1/2 pounds butternut squash, peeled and cut into 1 inch cubes
- 1/3 cup grated parmesan cheese
Preparation
Step 1
In a large bowl mix parsley, oil, garlic and pepper. Add squash and parmesan cheese; toss until well coated.
Place in an ungreased shallow baking dish.
Bake, uncovered at 375 degrees for 45-50 minutes or until squash is tender.
