Key Lime Coconut Tarts

These are soo good, like a tropical key lime pie.

Ingredients

  • Crust:
  • 3 cups graham cracker crumbs
  • 10 Tb melted butter
  • 4 Tb sugar
  • Filling:
  • 1 15 oz can cream of coconut
  • 2/3 cup yogurt (sour cream?)
  • 1/2 cup lime juice
  • 2 Tb lime zest
  • 3 Tb cold water
  • 2 Tb gelatin

Preparation

Step 1

Crust:
Mix together ingredients & press into pie pan(s). Bake at 350 degrees for 15 minutes. Cool.
Filling:
Whisk together coconut crea, yogurt, lime juice & zest. Put cold water in a small bowl.sprinkle gelatin over top & let stand until softened, about 10 minutes. Put bowl over a small sauce pan of simmering water. Whisk until gelatin dissolves, about 1 min. Whisk gelatin into coconut mixture, pour into crust(s) & chill for at least 4 hours
