Ingredients

  • Fillings:
  • 4 cups AP flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 2 cups cold butter
  • 1 cup sour cream
  • Mushroom
  • 4 Tb oil
  • 4 Tb minced shallots
  • 2 lbs. assorted wild mushrooms
  • 2 cups heavy cream
  • 4 tsp thyme
  • Salt & pepper
  • Spinach- Tomato
  • 2 Tb olive oil
  • 2 cloves garlic, minced
  • 2 Tb fine bread crumbs
  • 1 tsp salt
  • 2 10 oz packages frozen spinach thawed & drained
  • 2 small tomatoes, sliced
  • 16 small slices gruyere
  • Spiced Apple-Cheddar
  • 2 lg peeled, cored & thinly sliced apples
  • 4 Tb sugar
  • 1/2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 Tb flour
  • 16 small slices cheddar cheese (I like a Vermont aged sharp)

Preparation

Step 1

Whisk together flour, salt & baking powder. Cut butter into pats & work into flour until crumbly w/ bits of butter intact. Stir in sour cream, dough will be craggy but cohesive. Roll out dough on floured mat & knead a few quick kneads. Pat dough into square & roll into an 8" by 10" rectangle. Dust both sides of dough w/ flour. Starting on short end fold dough in 3's like a letter. Flip over & turn 90 degrees, repeat roll & fold. Wrap dough in plastic wrap & refrigerate at least 30 minutes. Prepare filling.
Mushroom:
Sauté mushroom & shallots in oil, reduce heat add cream. Reduce to thicken. Add seasonings.
Spinach-Tomato
Sauté garlic in oil. Add crumbs & spinach. Put filling in pastry top w/ tomato slice & cheese slice.
Spiced Apple-Cheddar
Mix apple slices w/ spices, sugar & flour. Put apples on dough & top w/ cheese slice.
Prepare dough to fill:
Roll out 2 rectangles fold in 3's like a letter. Roll each into a 16" square & cut each square into 16 4" squares (32 total).
Fill the squares w/ your choice of filling, about 1 tsp in each square. Fold into a triangle, seal & bake at 400 degrees for 20-25 minutes
