Ingredients
- 1/2 C butter
- 1 1/2 C packed brown sugar
- 1 egg beaten
- 2 C sifted flour
- 1/2 Tsp Salt
- 1 Tsp baking soda
- 2 Tsp vanilla
- 1 C milk
- 2 C finely diced rhubarb
- 1/2 C sugar
- 1 Tsp cinnamon
- 7 oz coconut

Preparation
Step 1
Cream together the butter, brown sugar, milk and vanilla. Add the dry ingredients. Mix in rhubarb.Mix in sugar and cinnamon.
Bake at 350 degrees for about 40 minutes.
