Ingredients

  • 2/3

    Cup Sugar

  • 2

    Cups Flour (whole wheat, all purpose, or blend)

  • 2

    TSP baking powder

  • 1/4

    TSP baking soda

  • 1/4

    TSP Salt

  • 3/4

    Cup Sour Cream (or buttermilk)

  • 2

    Large eggs

  • 1

    Stick of Unsalted butter, melted and cooled

  • 1

    TSP Vanilla Extract

  • 3 to 4

    ripened bananas

  • 1/2

    TSP nutmeg

  • 1 1/2

    TSP cinnamon

  • 1/2

    TSP Cardamom and or allspice

  • 1

    Cup walnuts- chopped

Directions

1. Preheat oven to 350F. 2. Line muffin tin with paper liners and spray them with cooking spray. 3. Mix all ingredients (reserve 1/4 of the nuts to top the muffins) until combined and fill muffin tins with batter- about 1/2 to 3/4 way full. 4. Cook for 20-25 minutes or until done.
