Ingredients
- 2/3 Cup Sugar
- 2 Cups Flour (whole wheat, all purpose, or blend)
- 2 TSP baking powder
- 1/4 TSP baking soda
- 1/4 TSP Salt
- 3/4 Cup Sour Cream (or buttermilk)
- 2 Large eggs
- 1 Stick of Unsalted butter, melted and cooled
- 1 TSP Vanilla Extract
- 3 to 4 ripened bananas
- 1/2 TSP nutmeg
- 1 1/2 TSP cinnamon
- 1/2 TSP Cardamom and or allspice
- 1 Cup walnuts- chopped

Preparation
Step 1
1. Preheat oven to 350F.
2. Line muffin tin with paper liners and spray them with cooking spray.
3. Mix all ingredients (reserve 1/4 of the nuts to top the muffins) until combined and fill muffin tins with batter- about 1/2 to 3/4 way full.
4. Cook for 20-25 minutes or until done.
