Ingredients

    cups (15-ounce can) garbanzo beans (chick peas), drained and rinsed

  • 1/4

    cup tahini (sesame seed paste)

  • 1/3

    cup fresh lemon juice

  • 1 to 2

    cloves garlic, minced

  • 1/2

    teaspoon salt

  • 1/2

    teaspoon ground cumin

  • 1/4

    cup finely minced parsley leaves

  • 2

    tablespoons extra-virgin olive oil

  • Ground pepper to taste

Directions

In a food processor or blender, place garbanzo beans, tahini, lemon juice, garlic, cumin, and salt; blend until pureed. If the consistency is too thick, add some water. Remove to bowl. Refrigerate for several hours.
