Banana Berry Powercakes

Ingredients

  • 2 Eggs
  • 3/4 Cup Oats (pulsed into flour)
  • 1 Banana
  • 1/2 Scoop of VEGA Vanilla Protein Powder (about 2 TB)
  • 1 Spoonful of Flax Meal (flax seeds pulsed into flax meal)
  • Cinnamon To Taste
  • 5 Strawberries

Preparation

Step 1

I first made the flax meal (thanks to Vitamix for sending me some flax to pulse!) by adding the flax seeds into the S30 & turning on speed 1. Then slowly turn the blender up to higher speeds until the flax is pulsed.
I then made the Oat Flour by adding Rolled Oats into the Vitamix & turning to setting 1 (low speed). Honestly, that’s all it takes to make flour! A few seconds on setting 1 and you’re done! (I sound like an infomercial Winking smile) But for real – it works!
Next, put just the banana & eggs into the blender & mix until combined.
Pour the wet mixture into a bowl with your oats, flax, protein powder, & cinnamon.
Next, add in some chopped strawberries & mix until combined.
If you think the batter is too thick at this point, feel free to add some milk of choice until a nice smooth consistency!
Heat your powercakes on a medium/low greased pan (could use any oil or spray of choice) on one side for a few minutes.
Once they start to cook through and you see bubbles appear, flip to the other side & cook for a few minutes until golden brown.
Serve with any toppings! I made some VEGA pudding by adding the rest of the scoop of powder with coconut milk. I also topped them with some coconut oil. YUM!
