Bob's Hot Sauce

Ingredients

  • 1 Onion chopped (about 2 1/2 cups)
  • 2 Bell Peppers diced (about 2 cups)
  • 1 1/2 cups vinegar
  • 4 TBSP Salt
  • 3 Jalopenos chopped (add more to make hot)
  • 2 15oz can Tomato Sauce
  • 1 rounded tsp garlic (about 3 cloves finely chooped)
  • 1 heaping tsp Cayenne
  • 1 small can diced green chilis
  • 10 ripe tomatos (medium to large)

Preparation

Step 1

Boil tomatos for 15 minutes and peel them and run through food processor to make puree.

Add all ingredients to a 6 quart stock pot and bring to a boil. Then reduce heat to a simmer for a least on hour. When done sprinkle with 1 tsp of Fruit Fresh and stir in. Cool, can and put up.

According to Texas A&M the shelf life is up to 9 months.
