Quick Beef Soup

Ingredients

  • 1 lb ground beef
  • 1 medium onion, chopped (1/2 cup)
  • 1 pkg Hamburger Helper - beef noodle
  • 5 c water
  • 1 bay leaf
  • 1/4 tsp salt
  • 1/8 tsp pepper
  • 1 16 oz can tomatoes
  • 1 10 oz pkg frozen mixed vegetables

Preparation

Step 1

Cook ground beef and onion in Dutch oven, stirring frequently, until beef is browned; drain.

Stir in sauce mix, water, bay leaf, salt, pepper and tomatoes; break up tomatoes.

Heat to boiling, stirring constantly; reduce heat. Cover and simmer 10 minutes, stirring occasionally.

Stir in noodles and frozen vegetables. Cover and cook 10 minutes longer.

Remove bay leaf before serving.
