Ingredients
- 1/2 C. dark corn syrup
- 1/3 C. sugar
- 2 T. unsalted butter, softened
- 1/8 t. salt
- 3 (1.9 oz.) pkgs. frozen mini phyllo shells, thawed
- 3 T. bourbon
- 2 large eggs, lightly beaten
- 3/4 C. chopped pecans or walnuts
- 1/3 C. mini semi-sweet chocolate morsels
Preparation
Step 1
Preheat oven to 350°. Line a baking sheet with foil.
In a medium saucepan, combine corn syrup, sugar, butter, and salt. Cook over medium heat 3 to 4 minutes or until bubbly and sugar dissolves. Let cool completely.
Place phyllo shells on prepared baking sheet. Bake for 5 minutes. Cool completely on baking sheet.
Add bourbon to corn syup mixture; stir well. Add eggs; stir until well blended. Stir in nuts and chcolate morsels.
Spoon a scant 1 T. filling into each phyllo shell, stirring saucepan of filling frequently to keep nuts and chocolate distributed.
Bake for 15 minutes or until filling is puffed and set. Serve warm or at room temperature.
Note: These minature pies are best served the same day they are made to ensure that the phyllo shells stay crispy.
Makes 45 tassies.
