Pork - Roast Porkloin with Apple Rosemary Glaze

Ingredients
- 2 lbs pork loin
- 1 tbsp olive oil
- salt
- black pepper
- 1 12 cups apple juice
- 1 tbsp fresh rosemary (finely chopped or 1 t dried)
- 14 cup sugar
- 2 tbsps cornstarch
- 2 tbsps cold water

Step 1
1 For the porkloin:.
2 Preheat oven to 375°F.
3 Rub outside of porkloin with olive oil and sprinkle lightly with salt and black pepper.
4 Place pork on a baking rack with a sheet pan underneath and put it oven.
5 Roast for approximately 45 minutes or until the internal temperature reaches 165°F.
6 Let pork rest for five minutes before slicing.
7 For the glaze:.
8 In a saucepan combine apple juice, rosemary and sugar.
9 In a separate cup mix cornstarch and water.
10 Bring apple juice mixture to a boil and whisk in cornstarch mixture to thicken. Remove from heat.
11 Spoon glaze over sliced pork loin to finish.
