  • 2 egg yolks ( save egg whites for later)
  • 1 t vanilla
  • 1 c buttermilk
  • 1/4 c melted margarine
  • 1 c all purpose flour
  • 1 1/2 t baking powder
  • 1/2 t baking soda
  • 1/2 t sugar
  • Pinch of cinnamon



Step 1

Combine egg yolks, vanilla, buttermilk and melted butter.
Whisk until well blended. Combine the rest of the ingredients then stir into the egg yolk mixture.
Preheat waffle iron. Beat the reserved 2 egg whites until stiff peaks form. Add to above mixture, slowly and gently. Spoon appropriate amount onto griddle. Cook till golden brown. Waffles are usually done when steam subsides.
