  • 2 C. flour
  • 2/3 C. unsweetened cocoa
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 2 ripe bananas
  • 1/3 C. sour cream
  • 1 tsp. vanilla
  • 6 Tbs. butter, softened
  • 1 C. sugar
  • 1 lg. egg
  • 1 1/3 C. marsmallow creme

Step 1

Preheat oven to 350. Line 2 cookie sheets with parchment paper. In med. bowl, whisk togehter flour, cocoa, baking soda, and salt. From bananas, smash enough to make 1/2 a cup.. Finely chop the remaining banana anbd reserve. In another med. bow, mix mashed banana, sour cream, and vanilla. In a large bowl, beat together butter and sugar until just combined. Beat in egg until well blended, scraping bowl occassionally. Reduce speed to low. Add flour mixture alternating with sour cram mixture, beginning and ending with the flour mixture. beat unitl batter is smooth; scrape bowl occassionally. Drop 1 rounded tespoon of batter onto sheet, spacing 2"apart. With wet fingertips, flatten tops of balls to form rounds. Bake 12-15mins, or until cneters spring back when lightly pressed, roataing sheetsbetween upper and lower racks halfway through baking. Cool completely on sheets. Turn cookies flat side up. Top each with 1 Tbs. marshamllow creme. Divide reserved chopped banana among centers of creme topping, then add remaining cookies to form sandwhiches.
