Ingredients
- 1 pound large mushrooms
- 6 tbsp. butter
- 3 green onions, minced
- 3 to 4 tbsp. minced red bell pepper
- 4 oz. crab meat
- 1 cup fresh fine bread crumbs
- 1/4 tsp. salt
- 1/4 tsp. Cajun or Creole seasoning blend
- 1/8 tsp. pepper
- 2 tbsp. Parmesan cheese
- Marinara sauce
- Mozzarella cheese

Step 1
Clean and trim the end of stems of mushrooms. Pop remaining stem out. Chop stems and set aside.
Melt 2 tbsp. butter; brush over mushroom. Spray a shallow baking dish (8" square), or one that will fit the mushrooms in a single layer, with butter flavored spray or grease with butter.
Melt remaining butter in skillet; add reserved chopped stems, minced green onions and red bell pepper. Cook until vegetables are tender. Combine cooked ingredients with bread crumbs, crab meat and seasonings. Fill each mushroom - pile it up. Sprinkle each mushroom with a little Parmesan cheese.
Bake 350 degrees for 15 to 20 minutes, until hot and mushroom caps are tender. Top with Marinara sauce and Mozzarella cheese and bake for an additional 3 to 5 minutes until the cheese melts and is bubbly.
