Ingredients
- ICING:
- canola oil spray
- 1 cup chopped dried figs
- 1/2 cup packed dark brown sugar
- 1/4 cup canola oil
- 1/2 cup maple syrup
- 1 large egg
- 2 large egg whites
- 1/2 cup unsweetened applesauce
- 1/2 cup wholewheat pastry flour or wholewheat flour
- 1 1/2 cups unbleached all-purpose flour
- 3/4 tsp baking powder
- 3/4 tsp baking soda
- 1/4 tsp salt
- 1/2 cup powdered sugar
- 1 tbsp maple syrup
- 1/2 tsp maple flavouring (optional)
- 1-2 tsp water

Preheat the oven to 350F and lightly coat a 13x9 inch baking dish with canola oil spray.
In a small bowl, whisk together the dried figs, brown sugar, canola oil, 1/2 cup maple syrup, egg, egg whites, and applesauce.
In a medium bowl, stir together the wholewheat flour, all-purpose flour, baking powder, baking soda, and salt. Add the wet ingredients and blend just until combined.
Spread the batter in the prepared baking dish. Bake for 30 minutes, until light brown and springy to the touch in the center. Cool in the pan on a wire rack for 1 hour.
In a small bowl, mix together the powdered sugar, 1 tbsp of maple syrup, maple flavouring, and 1 tsp of the water. Use more water if necessary to allow the icing to drizzle easily from a spoon. Lightly drizzle the icing over the cooled cake and cut into bars. Serve. The bars may be stored in a tightly covered container for 2-3 days.
