Ingredients
- 1 pkg frozen raspberries, slightly frozen and broke
- apart
- 1/2 C white sugar
- 1 T lemon juicee (Real Lemon OK)
- 2 egg whites
- 1/8 tsp salt
- 1/2 pt whipping cream, whipped
- vanilla
- CRUST
- 1 1/2 C flour
- 1 1/2 tsp sugar
- 1 tsp salt
- 1/2 C Canola oil
- 3 T cold milk.
Preparation
Step 1
Mix first 5 ingredients and beat for 15 minutes or until it holds shape.
Whip cream, adding tsp vanilla
Carefully mix into first mixture. Pour into baked pie shell and freeze.
Best if made the night before serving.
CRUST
Sift flour, sugar and salt into pie tin. Combine Canola oil and milk. Pour this over dry ingredients and mix with fork until completely dampened. Press evenly with fingers to cover entire pie tin. Prick with fork and bake at approx. 425 deg for 12 -15 minutes.
