BLUEBERRY NUTMEG CREAM MUFFINS

The nutmeg really is a great taste with the fresh or frozen blueberries.

Ingredients

  • 2 cups sifted cake flour
  • 1/2 cup plus 1 tablespoon sugar
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 2 cups fresh or frozen and partially thawed blueberries
  • 2 large eggs, lightly beaten
  • 3 tablespoons corn oil
  • 1 cup nonfat sour cream

Preparation

Step 1

Heat oven to 400 degrees.

Lightly grease 12 regular sized muffin cups or coat with nonstick spray.
