DORIS’ REFRIGERATOR BRAN MUFFINS

Make a HUGE batch of muffins. Can be stored in the refrigerator for up to six weeks.

Great for company as you can make up a fresh batch each morning.

Ingredients

  • 1 box (20 ounces) Raisin Bran cereal
  • 5 cups flour
  • 5 teaspoon baking soda
  • 1 teaspoon salt
  • 2-1/2 cups sugar
  • 4 beaten eggs
  • 1 cup oil
  • 1 quart buttermilk

Preparation

Step 1

In a very large bowl, mix well the first five ingredients. Stir together the remaining three ingredients and mix into the dry ingredients. Store tightly covered in the refrigerator for up to six weeks.

To bake, fill greased muffin tins 2/3 full and bake in a 350 degree oven for 30 minutes or bake in paper cups in a microwave oven according to the manufacturer’s directions.

Yields 6 dozen.
