Mama's Matzoh Ball Soup
- 1/4 c. oil
- 4 cups chopped vegies,such as onion,carrots,celery and parsnips.
- 64 oz. fat free chicken broth
- 2 1/2 lbs. boneless skinless chicken
- 1 c. matzoh meal
- 4 eggs
- 1/4 c. seltzer
- 1/4 c. chopped fresh parsley
- 1 tsp. salt
Preparation time 30mins
Cooking time 30mins
In a lg. pot,heat 1 Tbsp. oil over med.-high heat.
Cook vegies until softened,5 mins.
Add broth and chicken;bring to boil.
Cover;simmer until meat is tender,about 45 mins.
Meanwhile,combine matzoh meal with eggs,selzer remaining oil,1 Tbsp. parsley and salt.
Cover;refrigerate 30 mins.
Shape into 16 balls.
With soup on low heat,add matzoh balls.
Cover;simmer,turning once,until cooked 25-30 mins.
Shred chicken,discarding bones;stir into soup.
Cook until heated through,3 mins;stir in remaining parsley.
