Ingredients

  • Blintz batter

  • 3

    eggs

  • 1

    C milk

  • 1/2

    t salt

  • 2

    T veg oil

  • 3/4

    C sifted flour

  • Cheese filling

  • 2

    C dry curd cottage cheese (or ricotta)

  • 1

    egg yolk

  • 1

    T melted butter

  • 2

    T sugar

  • 1

    t lemon juice

  • 3/4

    t salt

  • Oil for frying

Directions

Batter: Beat eggs, milk salt & oil. Stir in flour. Brush skillet with butter. Pour about 2 T batter into skillet, tilting pan to coat bottom and make a think pancake. Cook until bottom is lightly brown. Carefully turn pancake out of skillet. Cook remining cakes. Filling: Combine ccottage cheese, egg yolk, melted butter sugar, lemon juice and salt in mixing bowl and beat until combined. Spread 1 heaping T of filling along one side of pancake; turn opposite sides of pancake in toward center, then roll up. Heat 2 to 3 T oil in large skillet over medium meat until oil is hot. Add blintz, seam side down and cook, turning to brown evenly, until golden brown on all sides. Add additional blintzes to skillet, but do not crowd. Add additional oil as needed. Transfer to paper towel to ddrain, then serve warm with fruit and sour cream.
