Ingredients
- 10 - 12 eggs
- 1/2 c flour (or gluten-free rice flour
- 1 tsp baking powder
- 1/8 tsp salt
- 16 oz (4 cups) shredded Monterey Jack cheese
- 16 oz (2 cups) cottage cheese
- 1/2 cup butter, melter (you can use less)
- 2 cans (4 oz each chopped green chiles

Step 1
Beat eggs in large bowl. In smaller bowl, combine flour, baking powder, salt. Stir flour mix into eggs---batter will be lumpy. Add cheeses, butter, and chiles. Pour into greased 13 x 9 baking dish. Bake uncovered at 350 degrees for 35 min (until knife in center comes out clean. Let stand a few minutes before cutting.
Serve with salsa.....freshly sliced avocados......or refried beans.
