Ingredients
- 3 cups cooked brown rice
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 3 cloves garlic, minced
- 1/2 tsp salt
- 1/2 tsp rosemary
- 1/2 tsp oregano
- 1/8 tsp cayenne pepper
- 1/2 cup chia seeds
- 1 cucumber, sliced
- 1 tomato, chopped
- 2 green onions, sliced
- 2 tbsp parmesan cheese

Cooking Directions:
Place rice in a large bowl. Combine oil, chia, lemon, garlic, salt, herbs in jar, and shake well to mix. Pour over rice and lightly toss. Cover and let cool. Stir in vegetables and sprinkle on cheese or alternative cheese. Serve.
