Chocolate Mousse from the Petite Marmite
A very rich but light tasting mousse
- 2 T. gelatin
- 1 cup milk
- 1/2 cup sugar
- 6 egg yolks
- 2 cups whipping cream
- 2 T. bitter chocolate
- Dash of vanilla
Dissolve the gelatin in half the milk. Mix sugar and egg yolks. Bring the rest of the milk to a boil. Add the sugar and yolks. Return to heat but do not let boil again. Remove from heat and add chocolate pieces, gelatin and milk mixture. Chill.
When mixture is cold, whip the cream with 3 T. sugar and a dash of vanilla and fold into the chocolate mixture. Chill and serve with additional whipped cream.
