Ingredients
- 1 cup plain white cornmeal
- 3/4 t baking soda
- 1/2 t salt
- 1/4 cup vegetable oil
- 2 eggs, slightly beaten
- 1 medium onion, grated
- 1 cup buttermilk
- 1 small can cream style corn
- 1 small can El Chico Chilies, chopped or chopped jalapeños
- 1 cup grated sharp cheddar cheese
Preparation
Step 1
Mix meal, soda and salt in bowl.
Add oil, eggs, onion, buttermilk, corn and chili peppers.
Pour 1/2 the batter into greased 10" heavy skillet.
Sprinkle 1/2 of the cheese over batter.
Pour in remaining batter and sprinkle remaining cheese on top.
Bake in 425 degree oven for 25 minutes.
