Ingredients
- 1 tbsp olive oil
- 1 lg. onion, chopped
- 1/3 c. chopped sweet red pepper
- 1 lg. clove garlic, finely chopped
- 8 oz. zucchini, shredded
- 8 oz. lean ground beef
- 3/4 c. shredded cheddar cheese (3 oz)
- 1/2 low fat milk
- 2 c. instant potato flakes
- 1 tbsp grated parmesan cheese
- 1 tsp salt
- 1 tsp basil
- 1/4 tsp pepper
- 2 c. water
Preparation
Step 1
1. Heat oil in skillet over medium heat. Saute onion, red pepper, garlic; 3 minutes. Add zucchini and beef. Cook and stir until meat browns. Stir in 1/2 cheese, 1/2 tsp salt, basil and pepper. Reserve.
2. Preheat oven to 450 degrees. Grease pie plate. Boil water, milk, and salt. Stir in potato flakes. Then beat in egg and remaining cheese. Remove from heat.
3. Spread 1/2 of potato mix into individualized oven safe. 2 c. ramekins or aluminum pans. Spoon meat and potatoes on top and sprinkle with parmesan cheese. Bake at 15 minutes.
