Shrimp Marinate

You can use red or Vidalia onions to make it less sharp. Also, you can mix up the peppers, using red, green, yellow & orange. You can really use any amount, but not too much more than the recipe calls for.

Ingredients
- Marinade:
- 2 cups cauliflower broken into bite size pieces
- 2 large carrots, sliced 1/2 inch thick
- 1 green pepper, cut into 1 inch pieces
- 2 medium onions, cut into 1 inch pieces
- 2 celery stalks cut into 1/2 inch slices
- 2 pounds cooked shrimp
- 1/4 cup lemon juice
- 1/3 cup red wine vinegar
- 1 tsp. Dijon mustard
- 2 tsp. sugar
- 1 tsp. salt
- 1/8 tsp. cayenne pepper
- 2 Tbs. fresh parsley
- Dash of dry mint (optional)
- 1/2 cup vegetable oil

Step 1
Par-boil cauliflower & carrots in salted water for 5 minutes. Combine with green pepper, celery, onions and shrimp. Mix marinade throughly and pour over shrimp mixture and combine well. Marinate for at least 24 hours, stirring occasionally.
