Ingredients
- 6 medium-sized baking potatoes
- 1 cup mayonnaise
- 4 hard-boiled eggs, sliced
- 1 small onion, chopped
- 2 celery stalks, diced
- 1/2 cup sweet pickle relish, drained
- 1 (2-ounce) jar chopped pimientos, drained
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
Preparation
Step 1
Place potatoes in soup pot and add enough water to cover them. Bring to a boil over high heat and cook 20 to 25 minutes, or until fork-tender.
Drain and allow to cool. Cut into chunks and place in a large bowl.
Add remaining ingredients and combine until well mixed. Cover and chill for at least 2 hours before serving.
