Moroccan Red Onion & Orange Salad

Ingredients

  • 6 blood oranges
  • 2 1/2 t olive oil
  • 1 t lemon juice
  • 1/2 t grd cumin
  • 1/4 t paprika
  • 1/4 t coarse salt
  • 1/4 t grd blk pepper
  • 1/4 cup snipped, pitted whole dates
  • 1/4 cup pitted oil-cured olives, halved
  • 1 small red onion, peeled, quartered, and sliced very thin
  • 1/4 cup coarsely chopped fresh cilantro

Preparation

Step 1

Carefully cut away orange peel and white pith with a paring knife. Slice oranges into thin slices.
Place orange slices in large bowl. Gently toss with oil, lemon juice, cumin, paprika, salt and pepper. Arrange orange slices on a platter, overlapping slightly. Reserve juices in bowl.
Scatter dates, olives, onion and cilantro over oranges. Drizzle juices over salad and serve.
