Moroccan Red Onion & Orange Salad

Ingredients
- 6 blood oranges
- 2 1/2 t olive oil
- 1 t lemon juice
- 1/2 t grd cumin
- 1/4 t paprika
- 1/4 t coarse salt
- 1/4 t grd blk pepper
- 1/4 cup snipped, pitted whole dates
- 1/4 cup pitted oil-cured olives, halved
- 1 small red onion, peeled, quartered, and sliced very thin
- 1/4 cup coarsely chopped fresh cilantro

Preparation
Step 1
Carefully cut away orange peel and white pith with a paring knife. Slice oranges into thin slices.
Place orange slices in large bowl. Gently toss with oil, lemon juice, cumin, paprika, salt and pepper. Arrange orange slices on a platter, overlapping slightly. Reserve juices in bowl.
Scatter dates, olives, onion and cilantro over oranges. Drizzle juices over salad and serve.
