Ingredients
- 2 C cake flour
- 1 3/4 C sugar
- 3 tsp baking powder
- 3/4 tsp salt
- 1/2 C vegetable oil
- 2/3 C water
- 7 eggs, at room temperature, seperated
- 1 T lemon juice
- 2 tsp lemon zest
- 1 tsp vanila
- 1/2 tsp cream of tartar
- powdered sugar
- berries
Preparation
Step 1
Preheat oven to 325F.
Sift flour before measuring, then resift with sugar, baking poser and salt, into large bow of electric mixer.
Add oil and water; blend on low for 3 minutes. Beat yolks until light and lemony; add to batter. Beat on medium for 4-7 minutes, then add flavourings and blend. Beat egg whites with cream of tartar until stiff but not dry. Fold yolk mixture, very gently, into whites. Spoon into tube pan.
Bake about 1 hour. Invert and allow to cool for 1 1/2 hours. Remove from pan; dust with powdered sugar. Serve with berries.
