Fresh Fruit Salad with Lemon Poppy Seed Dressing

Ingredients
- 1/2 cup fresh lemon juice
- 1/2 cup sugar
- 1/4 cup white wine vinegar
- 1 tsp. Dijon mustard
- 1/2 tsp. salt
- 1 cup vegetable oil
- 1 1/2 T poppy seeds
- 1 pineapple, peeled, cored and cut into 2 inch cubes
- 1/2 cantaloupe, cut into 2 inch cubes
- 1/2 honeydew, cut into 2 inch cubes
- 2 pints strawberries, hulled and quartered
- 1 pint fresh blueberries
- Garnish: fresh mint leaves

Preparation
Step 1
In the container of a blender, combine lemon juice, sugar, vinegar, mustard and salt; process until smooth
Remove center piece of blend lid. With blender running, add oil in a slow steady stream. Add poppy seeds, and process for 20 seconds. Store dressing in an airtight container in refrigerator up to 1 weeks. Before serving, let dressing stand to room temperature, whisk until blended.
In a large serving bowl, combine fruit, Drizzle desired amount of dressing over fruit, and gently toss to coat.
Garish with fresh mint if desired. Serve immediately.
