Ingredients
- 4 cups water
- 2 cups yogurt
- 2 cups milk
- 8 cups spelt flour
- 4 cups AP flour
- 1/2 cup vital gluten
- 2 Tb salt
- 2 cups chopped olives
- 3 Tb yeast
Preparation
Step 1
Mix ingredients in mixer. Put in loosely covered container at room temp for 3-4 hours. Put in frig for 7-14 days. On baking day remove a grapefruit sized piece of dough w/ heavily floured hands. Shape into a loaf, cover & let rest for 45-60 min. Slash brush w/ cornstarch wash top with seeds & slash. Bake in steamed oven at 450 degrees for 35 min.
