Schiatta With Vine Grapes

Another version of the focaccia celebrating the wine harvest. Very pretty.

Ingredients

  • Topping:
  • 1 cup sweet white wine
  • 8 Tb olive oil
  • 2 cups water
  • 8 cups bread flour
  • 2 tsp sea salt
  • 1 Tb yeast
  • Grapes cut in half
  • Raw sugar
  • Olive oil drizzle

Preparation

Step 1

Divide dough into 6-8 pieces. Flatten the pieces on baking sheet.about 1/2" thick. Top w/ grape halves pressed into dough. Sprinkle w/ sugar & drizzle w/ olive oil. Cover & let rest for 30 min. Press dimple w/ fingers. Bake in steamed oven at 400 degrees for 20 min.
