Coconut Cake

Ingredients

  • CAKE:
  • 1 1/2 cups sugar
  • 1/2 cup oil
  • 3 eggs
  • 1/2 tsp. almond extract
  • 1 tsp. vanilla extract
  • 1 cup cooled, boiled water
  • 2 cup plus 2 tbsp. flour
  • 3 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1 cup coconut flakes
  • TOPPING:
  • 1 cup coconut flakes,toasted for 10 minutes in a 350 degree oven.
  • 1 stick margarine
  • 2 cups confectioners sugar
  • 1 tsp. vanilla extract
  • 3 tbsp. water

Preparation

Step 1

1. Preheat oven to 350 degrees.
2. For the CAKE:Beat eggs with sugar and oil. Add remaining ingredients. Mix well. Pour into a greased 9 by 13 inch pan. Bake for 35-45 minutes.
3. For the TOPPING: Cream the margarine,sugar,vanilla, and water. Spread on top of cooled cake. Sprinkle toasted coconut on top
