Not-Your-Mama's Tuna Salad

Ingredients

  • 1 cup store bought pesto sauce
  • 2 - 6 oz cans water packed tuna, drained
  • 4 scallions, cut into thin strips
  • 1 jarred whole roasted red peppers, cut into small pieces
  • handful of grape tomatoes, halved
  • 1/2 lb medium shell pasta, cooked ad dente, rinsed under cold water and drained well
  • salt
  • pepper

Preparation

Step 1

Place pesto in a large bowl, add tuna and flake it with a fork.

Add the scallions, roasted red peppers, tomatoes and pasta. Toss the salad to coat evenly. Season to taste with salt and pepper.
