- 2 tablespoons olive oil
- 2 tablespoons rice wine vinegar
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/2 small onion, finely diced
- 2 cloves garlic, finely diced
- 1 tablespoon ginger, grated
- 2 pounds pork roast
- 1 tablespoon vegetable oil
- 2 tablespoons sesame seeds
Preparation
Step 1
Combine 2 tablespoons olive oil, rice wine vinegar, soy sauce, sesame oil, garlic, onion and ginger. Whisk briskly until combined. Pour half marinade over pork roast in bag. Reserve other half of marinade.
Massage marinade into pork and leave to marinate at least one hour or up to 24 hours.
Remove pork from fridge about one hour before cooking. Preheat oven to 325 degrees.
Heat 1 tablespoon of vegetable oil into large frying pan on high heat. Remove roast from the marinade. Discard excess marinade. Sear pork on all sides (about 2 minutes per side).
Place into roasting pan. Pour reserved marinade over pork. Sprinkle with sesame seeds and put roast into the oven.
Roast for about 25 minutes per pound or 55 minutes per kilogram until internal temperature reaches 160 degrees.
Notes:
You can also freeze pork in marinade, preferably in freezer zipper bag. Freeze reserved portion of marinade in smaller freezer zipper bag and put both bags into larger one, label and freeze. When ready to cook, defrost and continue as usual.
