Ingredients

  • 2 Tbl butter or margarine
  • 2 cloves garlic, minced
  • 1 1/2 cups (4 0z) thinly sliced fresh mushrooms
  • 3/4 cup (2 oz.) prosciutto, sliced in strips, can substitute sliced smoked ham
  • 1 cup milk
  • 1/2 cup light cream
  • 1/2 pkg. (8 0z) penne rigate, uncooked
  • 1/4 cup grated parmesan
  • 1/4 cup chopped parsley

Preparation

Step 1

in a skillet over medium heat, melt butter, add garlic & mushrooms
cook 3 minutes or until tender, stirring frequently
add prosciutto, milk & cream; bring to a boil. Reduce heat to medium and simmer, uncovered until mixture is reduced by half, about 6 minutes
meanwhile cook pasta
remove sauce from heat; add 3 Tbl parmesan and parsley. Toss hot pasta in sauce; sprinkle with remaining cheese
makes 4 servings, about 1 cup each
