No Knead Bran Muffin Bread

People love this bread. Healthy & so tasty!

Ingredients

  • 5 cups water
  • 1 cup maple syrup
  • 2 Tb molasses
  • 1 cup oil
  • 1 tsp vanilla
  • 4 eggs
  • 3 cups wheat bran
  • 2 cups whole wheat flour
  • 8 1/2 cups AP flour
  • 3 T yeast
  • 2 Tb salt
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup vital wheat gluten
  • 1 1/2 cups raisins

Preparation

Step 1

Mix ingredients in mixer. Put in loosely covered container at room temp for 3-4 hours. Put in frig for 7-14 days. On baking day remove a grapefruit sized piece of dough w/ heavily floured hands. Shape into a loaf, cover & let rest for 45-60 min. Slash loaves, brush w/ cornstarch wash top w/ raw sugar & bake in steamed oven at 350 degrees for 40 min.
