Black Beans and Barley

Ingredients

  • 1 1/2 cups black beans
  • 1/2 cup brown lentils
  • 1/2 cup barley, brown rice or bulgar wheat
  • 6 cups distilled water
  • 2 tsp dried minced garlic, or 1 1/2 tsp fresh garlic
  • 1/4 cup dried minced onion, or 1/2 cup fresh onion
  • 3/4 tsp ground cumin
  • 1 1/2 salt or to taste

Preparation

Step 1

Soak beans in water overnight.

Discard water and rinse beans.

Put all ingredients except salt in a six quart dutch oven. Bring to a boil and simmer for one hour.

Add salt; boil for 1 more hour or until beans are soft, stirring every thirty minutes. Add additional water if necessary.
