Tangerine Beef and Snow Peas

Ingredients

  • Beef sirloin or skirt steak, 1 lb cut against the grain into thin strips
  • Soy Sauce- 2 T
  • Fresh Tangerine juice- 3 T
  • Rice wine or dry sherry- 2 T
  • Hoisin sauce- 2 T
  • Asian sesame oil- 1 t
  • Cornstarch- 1/2 t
  • Corn or peanut oil- 3 T
  • Garlic- 2 cloves
  • Ginger- 1 T
  • Snow peas- 1/2 lb trimmed, strings removed, cut in half
  • Steamed rice

Preparation

Step 1

1. Marinate the beef-
In a large bowl, combine the beef and soy sauce, mix well, and set aside for 10 min

2. Make the Sauce-
In a small bowl, combine 2 T water, and the tangerine juice, wine, hoisin sauce, sesame oil, and cornstarch and stir to dissolve.

4. Stir-fry the beef-
Heat a wok over high heat until veyr hot and add 2 T of the oil. Add the garlic, ginger, and beef and stir-fry just until the beef is browned about 2 min. Using a slotted spoon, transfer the meat to a bowl. Return the pan to high heat and add the remaining oil. Add the snow peas and stir-fry until tender, about 2 min. Give the sauce a quick stir, add to the pan, and stir until the sauce thickens slightly, about 10 sec. Return the meat to the pan and stir-fry until heated through, about 1 min. Serve with rice.
