Chicken Cordon Bleu

Ingredients

  • Sauce:
  • 8 boneless skinless chicken breast halves
  • 1/2 tsp pepper
  • 8 slices lean deli ham
  • 1 1/2 C shredded part-skim mozzarella cheese
  • or thin slice swiss cheese
  • 2/3 C fat-free milk
  • 1 C breadcrumbs or crushed cornflakes
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1 can (10oz) reduced-fat reduced-sodium condensed
  • Cream of Chicken soup undiluted
  • 1/2 C fat-free sour cream
  • 1 tsp lemon juice

Preparation

Step 1

Flatten chicken to 1/4 in. Sprinkle with pepper; place a ham slice and cheese slice down center. Roll up and secure with toothpicks. Pour milk into shallow bowl. In another bowl, combine the breadcrumbs (or cornflakes), paprika, garlic powder and salt. Dip chicken in milk, then roll in crumbs.

Place in 13x9x2 inch baking dish coated with nonstick cooking spray. Bake uncovered 350 for 25-30 minutes or until juices run clear.

In small saucepan combine soup, sour cream and lemon juice. Heat through.

Remove toothpicks and serve with sauce.
