Tomato Salsa

No fat-free pantry should be without a spicy salsa. More or fewer chiles can be added according to your taste. Serve this salsa with Vegetarian Red Beans and Seven-Grain Dirty Rice (recipe in collection), Brown Rice-Filled Chilies with Black Bean Sauce (recipe in collection), or with fat-free corn tortilla chips.

Ingredients
- 2 large ripe beefsteak or similar tomatoes, seeded and cut into 1/2-inch cubes
- 1/4 small red onion, minced
- 1/4 serrano or jalapeno pepper, seeds and membrane removed, minced, or 1 teaspoon red pepper flakes
- 1 tbsp fresh chopped cilantro or to taste
- 1 tsp fresh chopped oregano, or a pinch of dried oregano leaves
- 1/2 tsp fresh cracked black pepper
- Salt to taste
- Lime juice to taste (optional)
Preparation
Step 1
Combine all ingredients. Set aside for 1 hour or more before using. This keeps well refrigerated for 2 to 3 days.
