Chickpea Salad With Lemon Yogurt Dressing

Ingredients

  • 1/4 cup Balkan-style plain yogurt
  • 2 TBSP lemon juice
  • 1 pinch salt
  • 1 pinch pepper
  • 1 can (19 oz/540 ML) chickpeas, drained and rinsed (or 2 cups cooked chickpeas)
  • 1/2 cup halved grape tomato
  • 1/4 cup diced celery
  • 3 TBSP diced red onion
  • 3 TBSP chopped fresh mint
  • 2 TBSP chopped fresh flat-leaf parsley

Preparation

Step 1

In bowl, stir together yogurt, lemon juice, salt and pepper. Stir in chickpeas, tomatoes, celery, onion, mint and parsley until combined.
