Chicken with Spinach and Mushrooms in white wine

  • 1.5 - 2 lbs (4) Chicken Breast, no skin
  • 2 tbsp. Extra virgin olive oil
  • 3 cups quartered Mushrooms
  • 1/2 cup White Wine, 3 cup
  • 2 cloves Garlic chopped
  • Salt
  • Pepper



Step 1

Heat 1 tsp oil, medium high heat in skillet
Lightly season chicken with salt & pepper to taste
Cook chicken until browned (about 5-7 min per side)
Set cooked chicken aside
Add remaining oil to skillet
Cook mushrooms 3 min, then add garlic and wine
Cook just until wine is almost evaporated, then add spinach
Toss constantly until spinach is wilted
Serve immediately over chicken
